Delicious Blueberry Muffins

Blueberry Muffins


½ cup of Fresh Blueberries

2 cups of Flour

1/3 cup of sugar

2 teaspoons of baking powder

1 pinch of salt

¼ cup of Lemon Greek Yogurt

¾ cup of Milk

1/3 cup of Blueberry Dark Balsamic Vinegar

3 tablespoons of Butter Olive Oil

1 teaspoon of lemon zest

1 egg



  1. Preheat your oven to 375 degrees
  2. Put two tablespoons of Blueberry Balsamic Vinegar and your blueberries in a small pan and heat on low over the stove until it begins to thicken, stir occasionally, remove after about 5 minutes
  3. In a bowl, combine your flour, sugar, baking powder and salt together
  4. In a separate bowl combine your Lemon Greek Yogurt, Butter Olive Oil, lemon zest, the rest of the blueberry balsamic vinegar, and egg until consistent. Once this is mixed add your blueberry- balsamic vinegar mixture and stir until the blueberries are evenly distributed.
  5. Combine Mixtures, gradually adding the dry ingredients
  6. Place in about 12 muffin cups and then bake for 15 minutes or until the tops of your muffins are lightly browned.
