Delicious Side Salad and Dressing

 

Ingredients (Dressing):

1/4 cup of Oregano White Balsamic

1/8 cup Tablespoons of Chiquitita Olive Oil

Half a medium sized lemon

3 Tablespoons of plain yogurt or mayonnaise

1 Tablespoon of Dijon mustard

A pinch of cilantro

Salt and pepper to taste

Ingredients (Salad):

1 cup of spinach

1 cup of arugula or lettuce

3/4 cup of cherry tomatoes

1 cup of baby potatoes

1/2 cucumber

1/2 a yellow pepper

1/4 cup of roasted sunflower seeds

1/2 teaspoon of paprika

1/8 cup of feta cheese

Salt and pepper to taste

1. Cut baby potatoes in half and fry in a pan with olive oil, paprika, and salt and pepper. Fry until lightly crispy and golden brown, set aside

2. Chop cherry tomatoes in half, chop cucumber slices up and into quarters, and yellow peppers

3. Toss together spinach, arugula, cherry tomatoes, cucumber, and yellow pepper

4. Stir together all of the ingredients for the dressing and whisk together with a fork until consistent

5. Sprinkle potato, sunflower seeds and feta on top and drizzle the dressing over top, set some of it aside for additional optional use.
