Grilled Cod with Lemon Dill Salt

Ingredients for Cod

1/4 cup Lemon Olive Olive Oil

1/8 cup of Sicilian White Balsamic Vinegar

2 tablespoon of Lemon Dill Salt

2 medium fresh lemons quartered

2 pounds fresh cod fillets about 8 oz. portions - if you aren't consuming animal products feel free to use eggplant instead

Ingredients for Mashed Potato

2 medium sized potatoes

1/4 tablespoon of truffle or butter oil

Salt and Pepper to taste

Cooking the Mashed Potato
1. Boil water over high heat in a medium to large sized pot. While water is boiling cut the potato into 1 inch pieces (you can decide whether or not to keep the skin on)

2. Add potatoes and allow to boil until you can easily puncture with a fork

3. Remove from heat and strain

4. Add to a bowl and mash or use a beater if you would prefer creamier potato. Stir in your choice of olive oil and salt and pepper

Cooking the Fish
1. Put the Lemon Dill Salt and fish fillet into a bag and and gently massage the seasoning in. Add the Lemon Olive Oil and Sicilian Lemon White Balsamic and massage again until evenly coated. Allow the fish to marinade for about half an hour.

2. Grill the fish over medium indirect heat (on the barbecue or stovetop) and flip it after about four minutes. Remove the fish from the heat once finished.

3. Serve with the mashed potato and put lemon wedges on the side. Enjoy!
