Dark Balsamic Vinegars:

All of our dark balsamic is imported from Modena Italy, this is because the trebbiano grapes grown in this region are unique and essential in making a genuine balsamic. All of the grapes are stored in barrels for almost or more than years leading to a delicious taste. The longer this product is left to age the thicker and more flavourful it gets. 

Blackberry Ginger

This complex, aged dark balsamic vinegar is naturally flavoured with the gentle heat of spicy ginger and kissed with ripe sweet blackberry. Together, these flavours work especially well over pancakes, ice cream, in jelly, or in vinaigrette.  Pair with our Roasted Walnut or Toasted Sesame EVOO for an out of this world combination. Also excellent with Persian Lime olive oil for a show-stopping salad dressing.

Black Cherry

Rich and sweet, natural Black Cherry Balsamic has garnered rave reviews from our gourmet customers. This dark balsamic has character and will compliment spring mix salads and more flavorful accompaniments such as feta, goat or blue cheese. It is delicious over orange and onion Sicilian salad. Pairs with all EVOOs, but shines with the lighter varieties such as Orange and Lemon and is amazing with Roasted Almond. Try it with beef, pork, poultry, lamb, all vegetables, cheese, ice cream, yogurt, fruits, or oatmeal.

Black Mission Fig

Made with natural figs and our 12-year dark balsamic vinegar from Modena. Great harmony, rich and full of fig flavour.  Perfect for salads or as a meat marinade when paired with our Blood Orange or Eureka Lemon olive oil.  Amplify a Greek salad or souvlaki when paired with Tuscan Herb or Garlic EVOO. Serve it with cheese for an instant appetizer and crowd pleaser!


Our luscious Blueberry balsamic vinegar is amazing over garden salad or fruit salad. When paired with a mild EVOO, the intense blueberry flavour will shine. Also fantastic with Blood Orange or Lemon EVOO. Try it drizzled over fresh sliced peaches, cantaloupe, and ice cream. Pair with our Butter-flavoured olive oil on waffles, French toast, or pancakes. As an added surprise, it is delicious over blue, feta and goat cheeses.

Cinnamon Pear

This delightful dark balsamic vinegar is spicy and warm. Perfect drizzled over fresh fruit or as a dessert topping.  It has the unique taste of Pear, and is a great match with many of our sweeter, fruity olive oils for a delicious marinade or salad dressing. Try paired with our Butter flavored olive oil for a syrup replacement or with our Basil to amplify the Cinnamon flavour.

Dark Chocolate

This dark chocolate balsamic is rich and heavy. It resounds with the complexity of three different chocolates. Drizzle over vanilla gelato, mix with fresh berries, or add zing to your chicken mole. Use in most applications that compliment melted chocolate and leave out the calories and fat. Add it to your next smoothie, coffee or Greek yogurt for a healthy treat!


This aged Balsamic Vinegar is amazingly complex, with layers of authentic espresso and dark roasted coffee. It makes a fantastic glaze or BBQ base for pork, beef or chicken. Add a shot to an ‘affogatto float’, which calls for a tall mug of vanilla gelato scoops covered with coffee. Try paired with our Chipotle infused or wood-smoked EVOO for an amazing beef marinade or sauce. Dress your next salad with this, our Medium + Baklouti Green Chili EVOOs, sprinkled with our Black n’ White sea salt and pepper – it will not disappoint!


Floral, sweet and slightly herbaceous, our Lavender balsamic vinegar captures the essence of this ancient flower. Pair with chicken, use in vinaigrettes, over ice cream and with fresh fruits and berries. Use it with our Herbs de Provence EVOO, which also has a touch of lavender in it.

Neapolitan Herb

Zesty and savory, our Neapolitan Herb dark balsamic has just the right amount of acidity to shine in a multitude of culinary applications. It is made from traditional herbs long used in Neapolitan cuisine: rosemary, marjoram, thyme, garlic, and sage. It will boost your next salad, marinade or BBQ to the next level. Roast vegetables with it, deglaze sauté pans, add it to your Caesar drink! Pairs beautifully with the medium or robust EVOO.


The intense sweet-tart flavour of the pomegranate is a perfect match for hearty meats like lamb and duck. It makes an exciting dressing whisked with your favorite oil, pomegranate seeds, toasted nuts and feta cheese. It adds depth to pan sauces, braised meats or compotes. Drizzle over poached fruits and ice cream for an elegant and easy dessert.


This thick rich perfectly balanced balsamic oozes with the natural flavour of fresh, ripe raspberries. Both sweet and tart, it’s perfect tossed with mixed salad greens and a little feta cheese. Also enjoy as a marinade or glaze for pork, beef or chicken.

Red Apple

This balsamic has an enticing aroma and a delicate, sweet apple flavour, fruitier than most balsamic vinegars. It’s a wonderful way of adding aroma and taste to compliment any dish. It adds a refreshing lift to salads, sauces, chutneys and vegetables. It is amazing drizzled on pork, chicken or fish.


Both sweet and tart, our Strawberry balsamic vinegar is the result of adding pure and natural strawberry essence to our 12-year barrel-aged balsamic.  Can be used both as a vinegar and condiment on dessert dishes, such as fruit medleys and ice cream. Pairs well with any fruit-fused or Basil EVOO.

Tahitian Vanilla

Experience Eden in a bottle.  Sultry, fragrant Tahitian vanilla beans are married with our aged dark balsamic vinegar. The resulting collaboration is intoxicating as it is exotic.  Try with fresh strawberries or drizzled over a warm brownie. Pair with our fused Blood Orange olive oil. Use it in place of vanilla extract in any baked good, smoothie, granola parfait or flavoured coffee.


A customer favourite. The blend of 12 and 18 year-old balsamic results in a lower acid level, complimented by the sweet citrus flavour. Vegetables, spring mix, and salad greens will taste great when dressed with a vinaigrette of this and Blood Orange olive oil – you get a salad dressing combo with wow factor! It makes a very tasty glaze for baked salmon, and gives grilled chicken a sweet-sour zing, especially with Chipotle EVOO.


Our finest grade of aged balsamic vinegar from Modena, Italy is produced in the Traditional Style. It is aged using the Solera System for up to 18 years in chestnut, oak, mulberry and ash barrels. With a 4% acidity, our Four Leaf Quality Equivalent vinegar is exceedingly rich, complex and dense. It pairs beautifully with any olive oil in our collection for vinaigrettes, glazes or marinades. Also try drizzled over ice cream or with fresh fruits and berries.

Vermont Maple

This full-flavoured barrel-aged dark balsamic vinegar is made with real Vermont maple syrup. Perfect for BBQ sauce or marinades. Suggested meats include: beef, pork, poultry, wild game, lamb, and salmon. Excellent on all vegetables, especially yummy drizzled over sweet potatoes! For a truly amazing treat, try over ice cream. Pairs well with Chipotle and Butter-flavoured Olive Oil.
